Soft buttery lime cookies rolled in sweet lime powdered sugar for an easy homemade treat with bright citrus flavor.

There’s something about lime desserts that feels a little extra refreshing—especially during busy seasons when life feels heavy and complicated. These Lime Cooler Cookies are one of those simple little recipes that make homemade baking feel manageable again.

If you’ve spent any time around Honey & Habaneros, you already know I’m a practical kitchen person. I work long hours, I don’t want to make extra grocery trips every time I feel like baking, and I’m always looking for ways to keep homemade food realistic for everyday life. That’s exactly why I keep True Lime crystallized lime packets stocked in my pantry.

They let me make recipes like these anytime the craving hits without worrying about whether I have fresh limes sitting in the fridge. I use them in everything from dressings and marinades to beverages and desserts, so they easily earn their place in what I call my rolling supply kitchen—think of it as a practical way of cooking where you keep flexible ingredients on hand, prep ahead when you can, and build little conveniences into your kitchen routine to make busy weeks feel more manageable. 🍈✨

These cookies are soft, buttery, lightly citrusy, and coated in a sweet lime powdered sugar that gives them that classic cooler-cookie finish with a bright tropical twist. And because I’m always thinking ahead during busy weeks, I almost always freeze part of the dough for later. Having cookie dough ready to go means I can bake off as many—or as few—as I want without starting from scratch every single time. 🍪✨

Why You’ll Love These Cookies 🍈🍪

  • Bright lime flavor anytime – No fresh limes needed thanks to pantry-friendly True Lime packets.
  • Soft buttery texture – Tender cookies with a melt-in-your-mouth finish.
  • Perfect for freezer prep – Bake some now and freeze extra dough for future baking days.
  • Built for real life – Simple homemade baking that works around long shifts and busy schedules.
  • Fresh tropical twist – A fun citrus variation that feels a little different from traditional lemon desserts.

Ingredient Notes ✨

Keeping crystallized citrus packets in the pantry is one of my favorite practical kitchen tricks because they make homemade desserts feel much more doable during busy weeks. Instead of needing fresh citrus on hand all the time, I can make recipes like these whenever the mood strikes.

I find that 6–8 True Lime packets (depending on my mood) gives these cookies a bright lime flavor without overpowering the buttery cookie base, but feel free to adjust it to your own taste. If you love a stronger citrus punch, add a little extra.

For the powdered sugar coating, I like mixing powdered sugar with additional True Lime packets so the cookies get another layer of bright lime flavor after baking. You can even mix extra lime sugar ahead of time and store it in a sealed container in the pantry for future batches, quick dessert toppings, or future baking days.

Rolling Supply Kitchen Tip ❄️

These cookies freeze beautifully.

Scoop extra dough onto a parchment-lined tray and freeze until firm. Once frozen, transfer the dough balls to a freezer-safe container or bag so you can bake fresh cookies anytime without making another batch of dough.

This is one of my favorite ways to keep homemade treats manageable during busy weeks. Having cookie dough ready to go means I can bake off as many—or as few—as I want without starting from scratch every time. 🍪✨

Extra lime powdered sugar stores beautifully in the pantry and works great on muffins, pound cakes, and quick desserts.
