As I mentioned above, I keep crystallized lemon packets stocked in my pantry because they make homemade desserts feel much more doable on busy days. Instead of making a special trip to buy fresh lemons, I can grab a few packets whenever I want something with bright lemon flavor.
The lemon flavor in this recipe is flexible too. I find that 4–6 packets (depending on my mood) gives these cookies a bright lemon flavor without overpowering the buttery cookie base, but you can absolutely adjust it to your own taste.

- Add the flour and salt, and continue mixing until a soft dough forms.
- Scoop dough onto prepared baking sheets using a cookie scoop or spoon.
- Bake until the bottoms are lightly golden and the tops are set.
- Allow cookies to cool slightly.
- Combine the powdered sugar and additional crystallized lemon packets in a seperate bowl.
- Roll the cookies in the lemon powdered sugar mixture until coated, while they are just slightly warm.
