This Orecchiette Pasta Salad is a fresh and flavorful side dish made with tender pasta, crisp vegetables, and a simple homemade dressing. Perfect for picnics, potlucks, meal prep, and easy weeknight meals.

Ingredients

  • 8 oz Orecchiette pasta

  • 1 cup asparagus, trimmed and cut into bite-size pieces

  • 1 Yellow summer squash – sliced thin

  • 1/2 English cucumber, chopped or thinly sliced

  • 1 tbsp fresh parsley – chopped

  • 1 tbsp fresh chives – chopped

  • 8-10 Cherry tomatoes

  • Vinaigrette

  • 1 cup light tasting olive oil

  • 2 tbsp white wine vinegar

  • 1-2 tbsp honey

  • 1 tbsp shallots – minced

  • 1 lemon zested

  • 3-4 tbsp lemon juice – about 1 lemon

  • Salt and pepper to taste

  • Topping

  • Feta cheese – crumbled

Directions

  • Cook the Pasta
  • In a saucepan bring salted water to a boil, add the orecchiette pasta, cook according to package directions.
  • When pasta has just a couple minutes until it’s finished add the chopped asparagus and cook the vegetables until just al dente. Remove from heat, drain the pasta and asparagus, and rinse with cold water. Set aside.
  • Prep the Vegetables
  • Rinse the yellow summer squash and slice into thin slices.
  • Rinse the English cucumber and chop or slice.
  • Chop the parsley and chives.
  • RInse tomatoes.
  • The Vinaigrette
  • Mince the shallots.
  • First zest the lemon, then cut the lemon in half and juice both halves.
  • In a jar that has a tight lid combine all ingredients, light tasting olive oil, white wine vinegar, honey, shallots, lemon zest, lemon juice, salt and pepper and shake or stir to combine.
  • Final Step
  • In a large bowl combine the orecchiette pasta, asparagus, yellow squash, cucumber, tomatoes, parsley, and chives.
  • Drizzle the vinaigrette over the pasta salad and gently toss ingredients together. See note below for helpful tip.

Notes

  • Add chopped broccoli, cauliflower, or your favorite vegetables. This salad is versatile and the extra veggies are great.
  • This is a great recipe to use for meals throughout the week. If you’re doing meal prep don’t dress the pasta salad until your ready to serve. Instead, coat the salad lightly with light tasting olive oil, this will keep the pasta salad from getting soggy, which will last longer.
  • If you’re meal prepping cook the pasta just past al dente. We’ll be adding the dressing at the time of serving so we want the pasta to hold the dressing, not absorb it.
