3–4 lb pork shoulder or pork butt
Salt + pepper
1 Tbsp neutral oil – I like avocado oil
For the Barbacoa Sauce:
1 cup brown sugar
1 cup chicken broth -or- 1 cube chicken bouillon + 1 cup water
1 cup cola
6 ounces tomato paste
¼ cup apple cider vinegar
2 tbsp chipotle peppers in adobo – more or less for your own taste
1 tbsp chili powder – more or less for your own taste
1 tsp ground or smoked paprika
1 tbsp ground cumin
1 tsp garlic granules
1 tsp onion granules

Directions
- Sear the Pork:
I still rinse my meat — I know some say you don’t have to, but I’m old school. Whether you rinse the pork roast or not, make sure to pat it dry. Season generously with salt and pepper, then heat oil in a Dutch oven and sear all sides until golden. - Make the Sauce
In a bowl, whisk together: brown sugar, broth/bouillon+water, tomato paste, vinegar, chipotles, smoked paprika, cumin, garlic, onion powder, and the cola. - Slow Cook:
Pour your sauce over the pork.
Stovetop: Simmer on low 3–4 hours
Slow cooker: 6–8 hours on LOW
Instant Pot: 60–75 minutes (natural release) - Shred Pork and Reduce Sauce:
Shred pork directly in the pot, then simmer uncovered 10–15 minutes to thicken and caramelize.

For a milder flavor, stick to just 1 chipotle pepper.
For more heat, increase the chili powder, start with ½ teaspoon chili powder and add to taste — crushed red pepper, cayenne, or even my favorite, a little fresh habanero, all work great.
