These Barbacoa Tamales are bold, comforting, and surprisingly easy — perfect for weeknights, entertaining, or stocking your freezer for busy days.
This isn’t a full tamale tutorial — you already have that with my House Tamale Shells Base Recipe — but this post walks you through exactly how to turn your Barbacoa into the most delicious tamales.

How to Assemble Barbacoa Tamales
We’ll approach this assuming your Sweet Pork Barbacoa and Unstuffed Tamale Shells are already prepped and waiting in the freezer (they’re perfect for this kind of occasion).
1. Thaw the components
Remove the tamale shells and Barbacoa from the freezer and let them thaw while you gather your toppings.

2. Prep your add-ins
Grab anything you want to layer into your tamale:
- A little extra Barbacoa sauce
- Shredded and/or crumbled cheeses
- Avocado
- Olives
- Lettuce
- Radishes
- Tomatoes
- Green onions
- Sliced or chopped chiles
- Rinse and rough-chopped fresh cilantro
- Sour cream
- Fresh lime wedges

3. Reheat separately
Warm the tamale shell and Barbacoa separately at first — this keeps the shell from drying out or overheating.
Once assembled, I usually give the tamale a quick reheat before adding toppings.
4. Go rogue with assembly 😉
If you know me, I’m a rule breaker.

You can:
- Place the tamale shell on a plate and pile the Barbacoa + toppings on top, or
- Spoon the Barbacoa onto the plate first like above, set the tamale shell on top, and layer your toppings from there
No hard and fast rules here — just flavor.
However you choose to assemble it, know that it’s going to be delicious.
Serving Ideas
Barbacoa Tamales are incredible on their own, but here are some bold H&H twists:
- Serve with Mexican rice and/or charro beans
- Add pickled onions for acidity
- Pair with roasted corn, tomatoes, onion, and/or zucchini
- Drizzle with chipotle crema
