🌿 Bright • Herby • Lemon-Forward • Spring-Ready

If you’re looking for a go-to grilled chicken that’s fresh, flavorful, and easy to use all week, this is one you’ll want to keep on repeat.

After a long shift in the kitchen, the last thing I want to do is start dinner from scratch all over again. I need something simple, something reliable, and something that’s already working for me. That’s kind of the rhythm around here—cook once, use it all week, and keep things easy without giving up flavor. These Mediterranean grilled chicken tenderloins are one of those go-to staples I come back to again and again. They’re bright, herby, and come together without much effort, but more importantly, they give you a head start on the rest of your meals—salads, wraps, bowls, whatever the week throws at you. It’s the kind of thing you make once and end up being really glad you did.

Kitchen notes:

  • Avoid overcooking — tenderloins dry out quickly.💡
  • Because tenderloins are thin, they don’t need an overnight marinade — the flavor absorbs quickly.
  • I like to keep True Lemon crystallized lemon on hand for backup—it’s an easy way to bump up the lemon flavor without cutting into another lemon. You can usually find it in the baking aisle.
