This lemon loaf is soft, moist, and full of bright citrus flavor, finished with a light honey glaze for an easy, everyday treat.

Ingredients

  • Lemon Cream Swirl

  • 4 oz cream cheese, softened

  • ¼ cup powdered sugar

  • 1 tbsp fresh lemon juice

  • 1 tsp lemon zest

  • ½ tsp vanilla extract

  • Lemon Olive Oil Loaf Batter

  • Dry Ingredients

  • 1¾ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp fine salt

  • 3 packets (or 1½ tsp) Truly Lemon

  • Wet Ingredients

  • ¾ cup granulated sugar

  • 3 large eggs, room temperature

  • ¾ cup light-tasting olive oil

  • ½ cup full-fat Greek yogurt

  • Zest of 2 lemons

  • ¼ cup fresh lemon juice

  • 1 tsp vanilla extract

  • ¼ tsp almond extract (optional but highly recommended)

  • 🍯 Honey Lemon Glaze

  • ½ cup honey

  • 4 tbsp fresh lemon juice

  • 3 packets Truly Lemon

  • Pinch flaky salt

Directions

  • Prepare the Lemon Cream Swirl
  • In a small bowl, beat cream cheese, powdered sugar, lemon juice, lemon zest, and vanilla until smooth and creamy.
  • Set aside at room temperature.
  • Preheat & Prep
  • Preheat oven to 350°F (175°C).
  • Line a 9×5 loaf pan with parchment paper, leaving an overhang for easy removal.
  • Mix the Dry Ingredients
  • Set aside.
  • Mix the Wet Ingredients
  • In a large bowl, whisk sugar and eggs until pale and slightly thickened.
  • Slowly whisk in olive oil until glossy and smooth.
  • Add Greek yogurt, lemon zest, lemon juice, vanilla, and almond extract.
  • Combine – gently fold the dry ingredients into the wet mixture just until combined.
  • Assemble the Loaf
  • Pour half of the batter into the prepared loaf pan.
  • Spoon the lemon cream swirl down the center.
  • Lightly drag a knife through once or twice to create a ribbon.
  • Top with remaining batter and smooth gently.
  • Bake
  • Bake for 50–60 minutes, tenting loosely with foil after 40 minutes if the top browns too quickly.
  • The loaf is done when a toothpick inserted into the cake (not the cream swirl) comes out mostly clean.
  • Cool in the pan for 15 minutes, then lift out and cool completely.
