Jicama & Mango Salad w/Pineapple

This salad is bright, juicy, crunchy, and just spicy enough to keep things interesting. It’s the kind of thing you can throw together in under 10 minutes and eat straight out of the bowl — or pile onto a plate and pretend you’re sharing.

If you’ve never had jicama, this is your sign to try it. It’s mild, crisp, slightly sweet, and ridiculously refreshing — kind of like if an apple and a potato had a crunchy, mellow baby. It’s a total underdog in the produce section, but it belongs on every veggie tray and in every summer salad, full stop.

Here’s what you’ll need:

  • Jicama – peeled and sliced into matchsticks or bite-size sticks
  • Pineapple – cut into chunks, fresh is best if you have it
  • Mango – ripe and cut into cubes
  • Limes – fresh wedges to squeeze in the salad and to serve as a garnish
  • Avocado oil – just enough to coat
  • Tajín – generous sprinkle
  • Salt – a pinch to taste
  • Habanero – I suggest slicing it and add one slice at a time and toss until you get the right heat (optional, but oh so worth it)

How to make it:

There’s no strict recipe here—just a flavorful freestyle. Start with fresh jicama, mango, pineapple and cilantro, add a drizzle of avocado oil, dust it with Tajín and a pinch of salt, then toss in a thin slice, or two of habanero. I don’t cut up the habanero because just tossing the slice of habanero in the salad gives it the perfect heat for me. 🌶️ 😢 😉

Give it a mix, taste for heat, and if you’re feeling bold, add another slice. Crank up the fire or keep it tame—your call. I like to add more lime wedges on the top because some of us REALLY like lime.

Let it sit for a few minutes if you can — it only gets better once the lime starts soaking in.

Serve it with:

  • Grilled chicken or fish
  • Tacos
  • A big bowl and a fork, solo on the porch
