It all starts with a bed of crispy corn chips, layered with fluffy white rice and smothered in a savory mix of seasoned ground beef and saucy chili beans—and that’s just the beginning.

With a variety of toppings, everyone can customize their Fiesta Grande with an assortment of fresh vegetables, sauces, cheeses and sour cream that will not only satisfy, but have them wanting this amazing dish ALL the time!!!
Let’s Get Started!!!
Cook rice according to package directions, however, I cook my rice in the Instant Pot, perfect everytime 😉 While the rice is cooking, add the ground beef, onions, salt, pepper, onion powder into a large skillet. Use a spatula or large spoon to brown the ground beef, stirring everything together until well combined.”
Cook over a medium heat until the ground beef is browned and the onions are softened.
Stir in the can of chili beans to the ground beef mixture and heat through. Give the meat and beans mixture a taste and decide if you need to add more seasonings and if you would like it to be more saucy.

If you want more sauce, just add water in increments of about 1/4 cup until the desired consistency is reached. This is where the optional seasonings would come into play. If you add more water, you may want to add a bit more seasonings to spice it up to account for the now diluted sauce. Personally, I like to have more sauce, so I add additional water and seasonings.

Now it’s time to customize your Fiesta Grande. Start with a layer of corn chips, followed by a layer of rice, then meat and beans.

Now for the best part!!! Pile on what ever toppings sound good. Shredded lettuce, chopped tomatoes, chilies, green onions, chopped onions, shredded cheddar cheese, pepper jack, sour cream, avocado, cilantro, the list could be endless. I have some friends that like theirs with mangoes, chutney, and even raisins.

And of course, let’s not forgot to top it off with some shredded cheese, again, your choice of what kind. I like cheddars, and even pepper jack when I have some on hand.
Don’t worry about leftovers. They can be stored in airtight containers and put in the fridge for up to 5 days. Though, if your house is like mine, those leftovers won’t last that long.
