This sandwich is what happens when creamy, spicy, fresh, and toasty decide to hang out in one perfect bite. It’s easy to throw together and hits that sweet spot between snack and meal — especially when it’s too hot to cook or you just want something that feels fancy without actually trying.
What’s in it:
- Avocado – sliced or mashed – seasoned with just a pinch of salt and a hint of lime juice (optional, but excellent)
- Sliced tomato – juicy, summer-ripe
- Radish microgreens – peppery, fresh, and perfect for this sandwich
- Red onion – thinly sliced for that pop of sharpness
- Pepper Jack cheese – for a spicy kick
- Cilantro-Lime Mayonnaise – super simple, chopped cilantro, a pinch of sea salt, a light squeeze of fresh lime and a generous amount of lime zest.
- Crusty bread – toasted or untoasted, either way, you can’t go wrong
How to make it:
Toast the bread, or not. Slice or mash the avocado. Now just layer it all up. Done.
If you want it melty, pop the bread and cheese under the broiler for a minute before adding the rest. If you want it picnic-ready, keep it cool and crunchy.
This one’s good hot or cold, open-faced or pressed, solo or cut into little triangles for summer get-togethers.
Vegetarian-Friendly: This sandwich is naturally vegetarian — just be sure to choose a vegetarian-friendly pepper jack cheese (some brands use animal rennet, so check the label). For a plant-based twist, swap the cilantro-lime mayo for your favorite vegan mayo to keep all the creamy, zesty flavor without the eggs. Everything else is fresh, plant-based goodness!
Serve it with:
- Iced tea or agua fresca
- A handful of chips or fruit
- A summer afternoon and no schedule
