Welcome to Summer Bites — a seasonal series serving up light meals, easy snacks, and refreshing sips to keep things cool, flavorful, and totally fuss-free.
This sandwich feels like the grown-up version of a deli classic — stacked with tender roasted chicken, creamy avocado, juicy tomatoes, and just enough red onion bite to keep things interesting. It’s light but satisfying, fresh but filling, and a perfect way to put that tasty loaf of sourdough you just picked up to use.

What’s in it:
- Roasted chicken breast – chilled or warm, sliced kind of thin
- Mashed or sliced avocado – because, well, avocado
- Red bell pepper – fresh or roasted, both are great!
- Tomato – thick slices, summer-ripe
- Red onion – thinly shaved, just enough to pop
- Radish microgreens – peppery, bright, and beautiful
- Provolone cheese – for this post I used provolone, but, I love Havarti for this sandwich too, its creamy texture and mild flavor lets the other ingredients really shine. Of course, feel free to swap in your favorite cheese to make it your own.
- Fresh sourdough – toasted or not, depending on your mood
- Fresh garlic – when I toast the bread I’ll take a fresh clove of garlic and rub it all over the toasted sourdough, or, try the garlic mayonnaise
- Garlic mayonnaise – A quick garlic mayo is so easy to make! I simply grate a fresh clove of garlic with a microplane straight into mayonnaise, give it a stir, and it’s ready to go.
How to make it:

Stack it however your heart desires. I like starting with a layer of mashed avocado on the bottom slice to help anchor everything. Chicken goes on next, then tomato, onion, greens, and a top slice of sourdough to finish it off.
Want a little kick? Add a swipe of mustard or a few pickled jalapeños. Want to keep it creamy? A dab of mayo or herbed yogurt wouldn’t hurt either.
Serve it with:
- A crisp summer salad
- Lemon water or a chilled rosé (we won’t tell)
- The windows open and a fan blowing

Roasted Chicken & Avocado Sandwich

2-4 roasted chicken breasts – chilled or warm, sliced
1-2 avocados – sliced or mashed
1 red bell pepper – fresh or roasted – thinly sliced
1 -2 tomatoes – sliced
1 small red onion – thinly sliced
1 package radish microgreens – a few pinches to top it off
2-8 slices provolone cheese – or your favorite
2-8 slices fresh sourdough bread – toasted or not
1-2 fresh garlic cloves
Or:
1/4 – 1/2 cup garlic mayonnaise
Directions
- Toast the sourdough.
- Slice the roasted chicken breast into fairly thin slices.
- Peel the garlic and rub the garlic over the toasted sourdough.
- Slice the avocado, tomatoes, and red onion.
- To make the garlic mayonnaise simply grate a fresh clove of garlic with a microplane and stir in the mayonnaise.
- Begin to build the layers of this super simple, yet totally delicious sandwich and enjoy!
