1 tbsp baking soda – I know, it seems like a lot
1 cup melted butter & cooled – I use salted because that’s what I always have on hand, but unsalted is fine too.
2 1/2 cups granulated sugar
1⁄2 tsp salt
1 tsp ground cinnamon
1 tsp ginger
1/2 tsp ground cloves
1/2 tsp ground cardamom
1⁄2 tsp nutmeg – try fresh grated nutmeg, you’ll never go back
1/4 tsp allspice
1 large egg
1⁄4 cup molasses
4 cups all-purpose flour
Directions
- Preheat the oven to 350°F.
- Add the baking soda to the warm water and let it dissolve while working on step 2.
- Prepare a baking sheet with a silicone mat or parchment paper and set aside.
- Combine the cooled butter, sugar, salt, and spices together in a large mixing bowl using a mixer. If you prefer to do it by hand, go for it—your cookies will still turn out delicious.
- Lightly beat the egg, then add the egg and molasses to the butter mixture, mixing until fully combined.
- Add 1 cup of flour and mix to combine. Keep adding the remaining flour, 1 cup at a time, mixing after each addition. Be sure to scrape down the sides and bottom of the bowl so everything gets mixed evenly.
- Using a cookie scoop or tablespoon, scoop the dough (about the size of a walnut) and place it on the prepared baking sheet. Leave about 2 inches between each cookie.
- Bake in a preheated 350°F oven for 8–11 minutes. The tops will start to look crackled and the edges will be a light golden brown. Note: The centers will look very soft—almost underdone—but just do the spatula test. If you can lift a cookie with a spatula, they’re ready. These cookies are meant to be chewy—that’s what makes them so special.
- Let the cookies cool on the baking sheet for 1–2 minutes, then transfer to a cooling rack or serving platter. Store in an airtight container. These freeze beautifully, so go ahead and bake a double batch and stash some away for later!
