The pappardelle noodles are a little unexpected, but that’s part of the charm. Their wide ribbons catch the creamy broth beautifully without overwhelming the soup. If you don’t have pappardelle, egg noodles or any other pasta would work just fine.

Ingredients

  • 2-3 tbsp butter

  • 4-5 celery stalks – diced or chopped

  • 1 medium onion – diced or chopped

  • 1-1 1/2 lbs chicken breast – if you prefer thighs that works too

  • 2 to 3 sprigs fresh thyme (or 1 teaspoon dried thyme)

  • 2 to 3 bay leaves

  • 4 cups water plus 2 to 3 teaspoons Better Than Bouillon Chicken Base (or substitute 4 cups chicken broth)

  • 2 nests pappardelle noodles, broken into bite-sized pieces if desired (or about 6 ounces of your favorite pasta)

  • 3 to 4 cups heavy whipping cream (or substitute whole milk for a lighter soup)

  • Salt and freshly ground black pepper, to taste

Directions

  • Prep the ingredients.
    Dice or chop the celery and onion, thinly slice or cube the chicken breast, or thighs if using, gvather the remaining ingredients. If using fresh thyme, simply add the whole sprigs to the pot—you don’t need to strip the leaves first. As the soup simmers, the leaves will naturally fall from the stems, making it easy to remove the bare stems before serving.
  • Sauté the vegetables.
    Melt the butter in a large stockpot or Dutch oven over medium heat. Add the prepped celery and onion and cook for 5 to 7 minutes, stirring occasionally, until softened and fragrant but not browned.
  • Cook the chicken and herbs.
    Add the sliced or cubed chicken to the pot along with the fresh thyme and bay leaves. Cook for 3 to 5 minutes, stirring occasionally, until the chicken begins to turn opaque.
  • Build the broth.
    Pour in the water and stir in the Better Than Bouillon chicken base. (If using chicken broth instead, simply add the broth.) Bring the soup to a gentle boil, then reduce the heat and let it simmer for about 30 minutes to allow the flavors to meld.
  • Cook the pasta.
    About 5 to 10 minutes before you’re ready to finish the soup, add the pappardelle nests or your favorite pasta. Continue simmering until the noodles are tender.
  • Finish with the cream.
    Reduce the heat to low and stir in the heavy whipping cream or milk. Heat gently until warmed through, but avoid boiling after the dairy has been added.
  • Season and serve.
    Taste the soup and season with salt and pepper as needed. Remove the bay leaves and thyme stems before serving and ladle into bowls while hot.
